Happy Holidays! Merry Christmas! We celebrated Christmas today in our home and it was really nice. Unfortunately, I didn’t take any photos; however, Chrissie was able to snap a couple of her oatmeal cookies and fruit salad. Both were super good. We also had a big ham, scalloped potatoes, string-bean casserole…
Instead of focusing on taking pictures, I was zoned-in on feeding myself. I am now very full, very thankful to be fed so well, and very ready for bed!
For those of you who celebrate Christmas (like us), we hope yours was merry! For those of you who don’t celebrate Christmas, may your holidays be equally as special!
Seafood I’d Love to See Again
These are a couple pictures from the past I would love to eat again. We love cooking and eating seafood – ESPECIALLY fresh shrimp from Lowcountry South Carolina (shrimp and grits)! The cod was also a big hit and very much loved by my belly.
Simple, but Good
Simple smoked turkey on rolls we love from Publix; with Veganaise, tomato, avocado, and cheese. We also had a nice salad with pumpkin seeds and some ramen noodles from Whole Foods. It was simple, but super tasty!

Taco Wednesday!
Taco Wednesday might not sound as catchy as Taco Tuesday does; however, my family LOVES tacos any day of the week! This evening, we had some yummy shredded chicken tacos and it cost around ten bucks to feed all five of us. Pretty cool, considering that includes feeding a thirteen-year-old boy who can eat as much – if not more than – his dad!

Nothing to see here, folks…Just this morning’s delicious eggs on toast with avocado!
Purchased a better mini-skillet today from World Market that is BPA free and a bunch of other good stuff. Can’t wait to try it. It’s going to replace at least one of those in the picture above.

Holiday Blend Trail Mix
This wasn’t my idea, nor was it my recipe; however, both were great. This blend of magic consists of yogurt pretzels, red and green M &M’s, non-salted cashews, dehydrated cranberries, yogurt raisins, and salted macadamia nuts. The textures and flavors go really well together.
This was actually Chrissie’s recipe idea and the answer to us not eating out on grocery day. Instead of spending money on lunch for the five of us, she made up these snack bags filled with her Holiday Blend Trail Mix that we ate in the car. They were delicious, they kept us from feeling super hungry, they weren’t messy, and they saved us some money.
Was this recipe organic? Nope. Was it delicious? Yep. Did we use 100% recyclable, 100% compostable, toxin-free sealable paper sandwich bags? You better believe we did!
That Shrimp Salad Sandwich…

So here’s that shrimp sandwich I was talking about yesterday; with onions, lettuce, and tomato. To recap, I grilled a bunch of Montana-beef-burgers – enough for two days worth of dinners – but felt like another one (which would have ruined having some this evening). Instead, I ended up making this delicious shrimp sandwich, and we were able to have burgers again tonight. Win win. Yum yum.
This weekend’s burgers and shrimp were a super healthy and low cholesterol addition I’d like to make a regular thing. OK, I know they weren’t very healthy, and I know that won’t become a thing, but they were soooo good. I actually ate hummus wraps all last week for lunch, so I don’t feel too bad about enjoying this weekend’s good eats as much as I did.
Grillin’ in the New Year!
Happy New Year! Hope yours started out as nice as ours did. Chrissie rubbed down salmon with a little olive oil and seasoned it with garlic and a nice lemon-pepper blend. I then grilled it, basting it with a little teriyaki towards the end.
If you like salmon, try this. It seriously tastes waaaaaaaay better than any salmon I’ve ever had anywhere in all of my forty-eight years. We had that with garlic mashed potatoes and a yummy black-eyed pea and cucumber salad.
Yes, it’s supposed to be winter, but today was sunny and beautiful and not even sweatshirt weather…so we grilled. It turned out to be a great idea!

She Feeds Me Love
My wife taught herself how to cook when she was in her late twenties – back when we first began dating. The first meatloaf she’d ever made, she made for me, and it was better than my mom’s. We were married six months later.
Since then, her love for cooking has grown and evolved. She loves challenging herself with new dishes and processes, and I love eating every one of her creations. I know how lucky I am to eat so well and to have her in my life.
It’s been nearly fifteen years since she made her first meatloaf for me. She made it with love and she’s been cooking everything she makes with it since.
